Sample Recipe - Lamb Bhuna

1kg of leg of lamb cut into small pieces
1 kg onions (finely chopped)
200g tin of tomatoes
25ml of olive oil or sunflower oil
1 heaped teaspoon of ginger and garlic paste
2 heaped teaspoons of salt
2 heaped teaspoons of red chilli powder
1 / 4 teaspoon of haldi
1 heaped teaspoon of gharam masala
Handful of fresh coriander

Place all ingredients except the oil, gharam masala and the coriander in a strong saucepan and add 600ml of cold water. Cook using a moderate heat until lamb is tender stirring occasionally. (If the mixture becomes too dry then add more water) Add the gharam masala and the oil and fry lamb until the oil separates out. Add the coriander and fry for another minute or two.
